  • 2 1/4 cups all-purpose flour
  • 3 eggs
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup yogurt (citrus-flavored)
  • 1/3 cup vegetable oil
  • 1 tbsp baking powder
  • 1/2 orange (grated zest)
  • 1/2 lemon (grated zest)
  • 1 mandarin (grated zest)

Let’s Start!

  • Break the eggs, place them in a bowl with the sugar and start beating them with an electric mixer until you get a creamy and compact foam.

  • Pour the yogurt and oil over the beaten eggs and mix again, also add the grated citrus zests, being careful not to take the white part.

  • Combine the flour and the baking powder, then sift them into the previously obtained mixture, also adding the milk. Mix again to complete the plumcake batter.

  • Take the plumcake pan, grease it and lightly flour it, then pour the batter into it and bake in a preheated oven at a temperature of 340°F for 45/50 minutes. Always check before removing from the oven by doing the toothpick test. Insert a toothpick into the center of the cake, if it comes out dry and clean, it is cooked.
