Steps to Prepare the Cookies
With what you have at home, prepare the 3-ingredient flourless cookies, and it’s not little: hazelnuts and sugar with egg white. It reminds a bit of another recipe, it’s true, but this is what I had: an egg white leftover from a previous preparation to which I added ground hazelnuts, sugar, and a small sweet variant.
Finely chop the hazelnuts.
Reduce them to flour.
Combine the egg white with the sugar and
beat them with an electric mixer until stiff peaks.
Add the ground hazelnuts and sugar to the egg whites, mix and
add the dried cranberries if you like. Fresh ones will be perfect too!
Let the mixture rest for a few minutes.
I used an ice cream scoop, but 2 spoons will also work to make the balls. I made them and placed them on parchment paper directly on the baking sheet.
I used a glass to flatten the balls and form the cookies.
All ready: bake at 365°F for 12 minutes.
And here they are ready, the 3-ingredient cookies with dried cranberries.
