Asparagus Meatballs

Very soft asparagus meatballs without frying, baked for a real treat. In addition to white asparagus, we also find purple, wild, green asparagus and often even wild ones on the market. Now is the right time to harvest asparagus, from April to June, they are rich in vitamins and minerals, mostly calcium and iron. With the arrival of spring, the green color of chlorophyll from asparagus, as well as zucchini, bursts into our kitchens to delight us with many preparations. Today I ventured into a very easy recipe loved by everyone, young and old, the meatballs. Asparagus meatballs are a true delicacy, I accompanied them with a sauce of fake mayonnaise, which I usually also use for steamed asparagus.

Ingredients

  • 5 oz asparagus
  • 5 oz ground beef
  • 1 egg
  • 1 oz sunflower seeds
  • 1/2 cup breadcrumbs
  • 3/4 tsp salt
  • 2 tbsp extra virgin olive oil
  • 1 tsp sweet paprika

Steps

  • When the asparagus season begins, I always store a few bags in the freezer, maybe to use them for a quick risotto or to prepare pasta or meatballs.

  • In my corded chopper, I coarsely chop the asparagus stalks.

  • I place the chopped asparagus in the bowl

  • and add the ground beef,

  • the egg,

  • the salt,

  • the sunflower seeds,

  • the breadcrumbs, and

  • the sweet paprika

  • With a fork, I mix the mixture, then use my hands to make it homogeneous and prepare my asparagus meatballs.

  • I prepare the meatballs; with these quantities, I made 12. Place them on the baking tray lined with parchment paper and drizzle with extra virgin olive oil.

  • Bake them for 20 minutes at 375°F

  • What can I substitute for the meat in asparagus meatballs?

    You could replace with boiled potatoes the same amount of meat and if they are too soft add breadcrumbs until you reach your preferred consistency to make asparagus meatballs.
