Asparagus with fake mayonnaise, fake is just a way of saying obviously fake, let’s say lean, no eggs and little extra virgin olive oil, something very diet-friendly and tasty at the same time. It may seem strange but diet-friendly and tasty combine perfectly. When asparagus hits the market it is a celebration, signaling the arrival of spring, of beautiful days, sun and sea and lots of colorful vegetables and fruits. I love asparagus even though I have to be very careful not to consume a lot, as they have diuretic properties directly stimulating the kidneys, but given their short seasonality, it does not become a real problem.

- 7.75 oz asparagus
- 1 jar Greek yogurt
- 1 tsp paprika
- 1 pinch black pepper
- 1 tbsp extra virgin olive oil
- 1 tsp salt
Necessary Tools for Preparing Asparagus with Fake Mayonnaise
- Chopper

Steps
Clean the asparagus with a vegetable peeler from the middle downwards, trimming off a good portion. Wash them and boil in a little water for 10 minutes
Prepare the fake mayonnaise like this: in a bowl, mix the Greek yogurt with the paprika, salt, and olive oil using the whisk to combine all the ingredients.
Place the steamed asparagus on a serving plate and the fake mayonnaise in a small bowl beside it, serve with plenty of freshly ground black pepper.
Asparagus and how to store them
When preparing asparagus, I always select a portion to cut into small pieces and freeze for a future risotto or pasta, very handy. The more woody section I boil in plenty of water for at least half an hour, covered over medium heat and then strain the resulting broth to use in other preparations.
