Blueberry and Banana Muffins

Blueberry and banana muffins for Christmas Eve breakfast and, of course, not just for that: they’re also great for tomorrow morning with a coffee on the side. The difference is also made by the flower-shaped mold, a rose. You can use another mold, one of your choice, spherical, flower-shaped, or simply paper cups as we find them in stores. The market today offers so many that you’re spoiled for choice.

Ingredients

  • 2 eggs
  • 80 ml peanut oil
  • 1 fruit yogurt (I used lemon)
  • 2 1/4 tsp baking powder
  • 1 cup cup sugar
  • 2 3/4 cups flour
  • 1 banana
  • 1 cup cup blueberries
  • 1 tsp powdered sugar

Tools

  • Stand Mixer

Steps

  • In the stand mixer, I put the sugar with the eggs. Meanwhile, I peeled the banana and cut it into pieces.

  • If you don’t want to use the stand mixer, an electric whisk works just fine to prepare the muffins.

  • I whipped the eggs with sugar until they became frothy.

  • I added the flour with the baking powder, alternated the yogurt with the oil, and lastly, the banana pieces.

  • I stir with the spatula and gently add the blueberries.

  • I lightly spray the non-stick spray in the silicone molds and pour the batter without filling them completely.

  • Meanwhile, I preheat the oven to 356°F (180°C), and once it reaches the temperature, I bake the muffins for 25 minutes.

  • And here they are, ready and perfectly baked.

  • I wait for the mold to cool slightly to remove the blueberry and banana muffins.

  • I dust with powdered sugar.

  • Blueberry and banana muffins are delicious for breakfast.
