Blueberry Clafoutis

Blueberry Clafoutis, although the original recipe actually calls for only black cherries with pits to prevent juice loss when removed. Clafoutis refers to a French dessert specifically from Limousin, a region in the south-central part of France, which is traversed by the Massif Central and sparsely populated, with Limoges as its capital. This dessert consists of black cherries but can also be prepared with other fruits. Today, I used blueberries and I have to say it turned out delicious. The name clafoutis derives from the verb “clafir,” which means “to fill,” and this refers to the cherries that should fill the dessert. The mixture is similar to that of crêpes with oven baking, and once cooked, it has a soft and moist consistency like cream or even a pudding.

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup milk
  • 7 oz blueberries
  • 1 lemon (grated peel)
  • 1 1/2 tbsp butter

Steps

  • Clafoutis is usually prepared during cherry season, so spring-summer. Today I tried making it with blueberries and I assure you it’s fantastic.

  • In the bowl, place sugar and eggs.

  • A nice grating of lemon.

  • Start to whip the ingredients.

  • Start beating the eggs with sugar.

  • Add the milk and

  • the flour.

  • Gently add the soft butter little by little.

  • Continue stirring until you see a homogeneous mixture.

  • Arrange the blueberries in the buttered earthenware dish.

  • Gently pour the mixture over the blueberries with a ladle

  • until the mixture is complete.

  • Bake for 45 minutes at 350°F.

  • And here it is ready, the blueberry clafoutis.

    I think strawberries or wild strawberries would also work. I will definitely wait for strawberry season next year and try them.
