Cabbage and Pomegranate Salad

Cabbage and pomegranate salad, finally autumn arrives with its seasonal fruits! The pomegranate, besides juices, liqueurs, and more, remains one of my favorites in its raw form in salads. I use pomegranate seeds in many dishes when they’re in season. If it’s raw, thinly sliced cabbage and seasoned, you’ll discover a side dish that could become a main course. Pomegranate varieties are numerous, highly resistant to diseases, requiring very little water, and are used for ornamental gardens due to their beauty. None of the fruit is wasted, not even the peel, which is dried and used for infusions.

Ingredients

  • 12 oz savoy cabbage
  • 1 pomegranate
  • 1 tbsp sunflower seeds
  • 2 tsp sesame seeds
  • 2 tsp pistachios
  • 1 tsp salt
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil

Preparation

Cabbage and pomegranate salad.

  • Cut the pomegranate in half and extract the seeds.

  • Slice the savoy cabbage as thinly as possible. If you have a slicer at home, even better, use it.

  • Prepare the dressing with extra virgin olive oil, mustard and apple cider vinegar, seeds, and naturally the salt. Mix all ingredients.

  • Season the cabbage in a large bowl.

  • Sprinkle the cabbage salad with pomegranate seeds, mix and let it sit for a few minutes before consuming.

  • The cabbage and pomegranate salad is now ready.
