Ingredients to Prepare Charlotte Cake

  • 8.8 oz ladyfingers (gluten-free)
  • 7 Coffee (cups)
  • 2 cups whole milk
  • 4 egg yolks
  • 1.8 oz cornstarch (gluten-free)
  • 5.3 oz sugar
  • 8.8 oz mascarpone
  • 7 oz heavy whipping cream
  • 0.35 oz gelatin sheets
  • 1 small glass coffee
  • 12 ladyfingers (gluten-free)
  • 1 tbsp unsweetened cocoa powder

  • To prepare the pastry cream: place the egg yolks with the sugar and cornstarch in the saucepan, make them frothy, then add the hot milk, stir with the whisk for 7 minutes until thickened. The pastry cream is ready, let it cool well.

  • In the meantime, in the stand mixer, whip the heavy cream (you can also use an electric whisk), add the pastry cream and mascarpone and place in the fridge. Soften the gelatin sheets in water and when ready, squeeze them and add to the small glass of hot coffee to dissolve them, add to the cream in the stand mixer, mix well and return to the fridge.

  • Place the adjustable cake ring on a serving plate, dip the gluten-free ladyfingers in the coffee and place them on the bottom to form the base of the Charlotte cake with tiramisu

  • Pour the cream over the ladyfinger base, smooth well with a spoon, let the cake rest in the refrigerator for at least three or four hours.

  • After the necessary time to firm up the cream

  • Remove the cake ring from the Charlotte cake with tiramisu and prepare the ladyfingers cut in half for decoration

  • Dust with plenty of unsweetened cocoa and decorate the Charlotte cake on the sides with ladyfingers divided in half

  • The Charlotte Cake with Tiramisu is ready.
