Chicken salad, currently very popular… those who want can season it only with lemon, otherwise for everyone else there is mayonnaise. A special, tasty one-dish meal, you can prepare the ingredients in advance and assemble them when ready to eat. Sometimes it may happen to have leftover chicken with potatoes from the previous day, in fact, it happened to me to prepare a very good salad even with that and without mayonnaise, seasoned only with oil and plenty of lemon.

Ingredients to prepare the chicken salad
- 9 oz chicken breast
- 7 oz pickled mixed vegetables
- 1 head lettuce
- 5.5 tbsp mayonnaise
- 1 lemon
- 1.5 tsp salt
- 3.5 tbsp extra virgin olive oil
Tools to prepare the chicken salad

Preparation for the chicken salad
In a small pot, boil the chicken breast, easier to cut into strips for twenty minutes.
Wash and dry the lettuce well
Cut the lettuce into the thinnest julienne you can.
Drain the pickled mixed vegetables, easily found in supermarkets, which include julienned carrots, celeriac, and some peppers
Cool the chicken and cut it into thin strips.
Combine all the ingredients in the bowl, the chicken with the pickled mixed vegetables and the julienned lettuce.
If everyone loves mayonnaise, then add it too, otherwise, just some oil will suffice. Serve the mayonnaise at the table and those who like it can add it to their plate.
