Chicken with peppers is a simple main dish to prepare with just a few ingredients: let’s say two main ones, and of course various seasonings to be added according to your habits and recipe. Chicken with peppers is now widespread throughout Italy, although its origins are from Lazio. A typical dish from the Roman countryside, it is usually prepared for the August 15th holiday, but any day of the year is always a good day to cook and offer to friends, brightening the table with its colors. Today I wanted to experiment with my lighter and quicker version of peppers. The idea came from Jessica, I’ve been following her blog for a long time, which I add here, blog.giallozafferano.it/letortedigessica, I liked the idea of the pressure cooker to speed up cooking times and use less fat. So I changed my recipe, now I’ll tell you how.

Ingredients
- 14 oz chicken
- 21 oz peppers
- 1 glass dry white wine
- 1 sprig rosemary
- 1 clove garlic
- to taste salt
- 4 leaves sage
- 2 zucchinis
- to taste pepper
Tools
- High-sided saucepan
- Pressure cooker
Preparation
Cut the chicken into pieces, place it in the pressure cooker with the aromatics and wine.
Cook for fifteen minutes once the pressure cooker reaches temperature. Open, add the peppers and move everything to a pan.
I usually don’t do this, but today I added a couple of zucchinis, following the principle of not wasting anything!
Let it cook for another fifteen minutes, let the chicken color well with the peppers, adjust salt and pepper.
