  • 0.7 oz anchovies in oil
  • 0.25 cup extra virgin olive oil
  • 1 clove garlic
  • 1.3 tbsp apple cider vinegar

Steps to Prepare the Chicory and Artichoke Salad

  • In the chopper bowl, place the anchovies, vinegar with olive oil, and garlic. Chop until the mixture is homogeneous with the anchovies completely blended with the rest of the ingredients.

  • Divide the drained and well-dried chicory into two plates.

  • On top of the chicory, slice the artichoke with the mandolin, dividing it half per plate. Season with a pinch of salt (remember that anchovies are quite salty).

  • Dress the chicory and artichoke salad with the prepared anchovy sauce.

  • Mix all ingredients and let rest for 30 minutes before serving, turning often.
