- 1 clove garlic
- 1.4 tbsp apple cider vinegar

In the chopper’s cup, place the anchovies, vinegar, oil, and garlic. Blend until the mixture is smooth with the anchovies fully incorporated into the rest of the ingredients.
Divide the drained and well-dried chicory shoots between the two plates.
On top of the chicory shoots, slice the artichoke with the mandoline, dividing it half per plate. Season with a pinch of salt (remember the anchovies are quite salty).
Dress the chicory shoots and artichoke salad with the anchovy sauce prepared earlier.
Mix all the ingredients and let rest for 30 minutes before serving, stirring often.
