- 10.5 oz dark chocolate
- 1 cup blanched almonds
- 1 cup walnuts
- 1/4 cup pine nuts
- 1/2 cup pistachio crumbs
- 8 dark chocolate eggs

Steps to Prepare the Chocolate Nest
Chop the almonds and walnuts into pieces and toast them in the oven at 340°F for 10 minutes along with the pine nuts and pistachio crumbs.
Chop the chocolate into pieces, place it in a container, and immerse it in a bain-marie over moderate heat. Stir with a wooden spoon, using the thermometer, melt the chocolate at 113°F, immediately transfer the container with the chocolate into cold water and lower the temperature to 77°F. Then transfer the container with the chocolate back to the bain-marie and, always stirring with the wooden spoon, raise the temperature to 90°F.
Remove the chocolate from the bain-marie and incorporate the toasted nuts.
Mix the nuts and chocolate well.
Prepare a stand with parchment paper and place a 4-inch ring mold in the center, or a glass will do as well.
Scoop the mixture and place it all around the ring mold to resemble a nest.
Let it cool completely at room temperature before removing the ring mold.
Also remove the parchment paper under the now cold chocolate nest and fill it with chocolate eggs.
