Citrus-Flavored Mushroom Cookies

Citrus-flavored mushroom cookies, these wonderful treats are easy to prepare and especially simple. Naturally, you will undoubtedly find all the ingredients in your pantry. Not long ago I made orange marmalade, and of course, I must say I didn’t use all the orange peels, and the rest I was sorry to throw away, to be honest. With a bit of time and lots of patience, I made candied orange peel, which now happily enriches my dessert. You can, if you wish, replace the peels with walnuts, hazelnuts, raisins, and any other ingredient or dried fruit you have available. Ingredients

  • 8.82 oz Rice Flour
  • 5.29 oz Sugar
  • 4.94 oz Butter
  • 4 Eggs
  • 3.53 oz Candied Orange
  • Orange Zest
  • Lemon Zest
  • 1 packet Baking Powder
  • 1 tbsp Vanilla Icing Sugar

Instructions

  • To prepare the citrus-flavored mushroom cookies, start by working the butter with the sugar in the stand mixer, adding the grated zest of an orange and a lemon.

  • Add the eggs one at a time, making sure the first is fully incorporated before adding the next.

  • Mix the baking powder with the flour and add to the mixture. Finally, add the candied orange peel.

  • Prepare the liners in the muffin pan, filling them three-quarters full with citrus-flavored mushroom cookie batter.

  • Bake in the oven at 356°F (180°C) for 18 minutes.

  • Here they are. Naturally, wait a few minutes before tasting!

Citrus-Flavored Treats

If you wish, you can replace the candied orange peel with an equal weight of raisins, softened in rum beforehand. You can also substitute the orange peels with hazelnuts or almonds. Use your imagination and naturally what you have on hand to replace the orange peels.
