- 0.5 cups whipping cream
- 5.3 oz mascarpone
- 0.7 cups powdered sugar

Steps to prepare the ice cream sandwich
Immediately prepare the cups of espresso and let them cool, then place them in the fridge as you will need them cold.
In the cup of the electric mixer, place the fresh cream with the mascarpone and start to whip, also add the powdered sugar and coffee.
30 seconds is enough and the cream for the ice cream sandwich is immediately ready.
I lined a tray with plastic wrap and placed the cookie cutters, I have two of the same size. I inserted the biscuit with the writing in the cookie cutter and immediately the coffee cream
I closed with another biscuit with the writing facing out, making a light pressure.
Did the same with the other cookie cutter.
I put it in the freezer to settle the cream for just 15 minutes, to remove the cookie cutter.
So I repeated the operation with the other cookies.
And here they are ready after leaving them for two hours in the freezer
