  • 4 oz wheat (whole durum)
  • 3.5 oz mixed pasta
  • 1 carrot
  • 1 shallot
  • 1 stalk celery
  • 2.7 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp chopped parsley

Steps

  • To prepare the cooked wheat soup, soak the wheat for 24 hours.

  • I cooked the wheat with 2 liters of water and salt, added the aromatic vegetables carrots, celery, and shallot which after cooking I blended and put back into the soup.

  • It takes 50 minutes to cook the wheat.

  • Another 8 minutes for cooking the pasta, then I turn off the heat and let it rest for 5 minutes in the pot with the lid on. I add a drizzle of extra virgin olive oil and if you like, you can add some spicy chili.

  • Today I prepared my mixed pasta by myself; I had an open packet of ziti, a few, and so I broke them as much as possible. I removed some cooking water from the wheat and threw in the pasta, 8 minutes and the cooked wheat soup is ready.
