I used rice flour for this preparation simply to test if substituting the flour would make the cream different. Absolutely, no change; in fact, with rice flour, I find the cream even lighter. This fantastic cream is what I use when I prepare chocolate rolls, instead of the usual traditional hazelnut cream or jam, I prepare a custard, either chocolate or orange cream, to make my dessert lighter. So, excellent for those intolerant to gluten and lactose.

  • With three beautiful oranges, you get a nice amount of juice, even more than 1 cup, at the peak of production, the fruits are so juicy and ripe that the flavor benefits too. In a small pot, I put the egg with the sugar and rice flour, whisk until it becomes nice and frothy, and add the juice little by little, on the stove always stirring with the whisk. It takes only 7 minutes to thicken, and here it is ready.
