Easy Kale and Pumpkin Side Dish

Easy and simple kale and pumpkin side dish, the best in the world, also in season and possibly local. Cooked differently, the pumpkin in the oven and the kale in a pan, together they make a simple but fantastic side dish. I discovered kale the first time I ate ribollita, since then I think I haven’t abandoned it. I often experiment with new combinations in the kitchen, especially with vegetables, my cooking is simple and rustic as I was used to at home with my family in Sicily.

Ingredients

  • 10.5 oz kale
  • 7 oz delica pumpkin
  • 1 sprig thyme
  • 0.2 oz salt
  • 2 tbsps extra virgin olive oil
  • 2 cloves garlic
  • 2 sprigs rosemary
  • 1 onion (small)

Preparation

  • Slice the pumpkin thinly with the skin on.

  • Season with thyme and garlic, salt with rosemary, and oil. Bake at 374°F for 30 minutes.

  • Meanwhile, place the kale in a pan with the sliced onion, oil, and salt, cook it covered for 20 minutes. Remove the cover and let the cooking water evaporate.

  • By the way, don’t throw away the pumpkin seeds, clean them from the pulp, dry them in the oven at 302°F for 15 minutes, turn off and leave them inside until they cool down.

  • Add the pumpkin to the kale and let them flavor together in the pan for 3 minutes.
