Savoy cabbage and chickpeas: an easy and delicious side dish, perfect for the cold January and February days. The cabbage family includes not only black cabbage, white cabbage, Chinese cabbage, Brussels sprouts, but also savoy cabbage, which is what I’ll be using today to prepare it stewed with chickpeas and leek. Savoy cabbage is one of the most used in winter for its high content of vitamins C and A, but also for its phosphorus, potassium, and calcium content, and of course much more.

- 1 cup cooked chickpeas
- 3 tbsps extra virgin olive oil
- 1.5 tsp fine salt
- 1 hot chili pepper
- 1 glass water

Steps
If you’re using dried chickpeas, soak them in water with a pinch of baking soda overnight. In the morning, after rinsing them, place them in a pot with a garlic clove, salt, and a sprig of fresh rosemary, and boil for 30/40 minutes. Or use canned chickpeas in natural brine, as I did today.
Wash the savoy cabbage leaves and cut them into strips.
In a pot, I put the extra virgin olive oil with the thinly sliced leek and a piece of hot chili pepper. I immediately added the savoy cabbage and let it brown slightly, stirring often for 10 minutes over high heat. I salted the cabbage and added a glass of water. Covered and over low heat, I let it simmer for 20 minutes. After removing the cover, I added the chickpeas drained from their cooking water, continuing to cook for another 10 minutes.
Here is the ready savoy cabbage and chickpeas: an easy and delicious side dish.
