  • 1 eggplant
  • 8.8 oz tomato pulp
  • 5.3 oz fiordilatte
  • 1 oz grated Parmesan
  • 2 sprigs basil
  • 1.4 tbsp extra virgin olive oil
  • to taste salt

Steps

  • Few steps to prepare eggplant parmesan in puff pastry. The first thing to do is to use scissors to open the package that protects the puff pastry, unroll it with all the parchment paper and place it directly on the baking tray.

  • Season the tomato with salt, oil, and basil and spread it over the puff pastry.

  • Add part of the grated Parmesan and half of the fiordilatte.

  • Peel the eggplant with the potato peeler and slice it thinly, use the mandoline to get really thin eggplant slices, arrange them on top of the pastry, and season with salt and oil.

  • Finally, place the remaining Parmesan and fiordilatte on top of the eggplants.

  • Put in the oven at 356°F for 30 minutes
