Eggplants, Capers, and Oregano

Eggplants, capers, and oregano: this is a dish that smells like Sicily, with capers from Salina and oregano from my land, just the scent of home. Only a few days left before the eggplants, the seasonal ones, finish, and soon you will find only greenhouse ones, which aren’t bad. This with eggplants is a side dish of unique simplicity and goodness, and so easy and quick to prepare that I confess to having made quite a bit and frozen it for winter. Portioned, unseasoned, and dated, they keep for up to 6 months, but I assure you they won’t last until Christmas.

Good is an understatement.

Ingredients

  • 2 eggplants
  • 2 tbsps extra virgin olive oil
  • 1 teaspoon dried oregano
  • 0.35 oz capers in salt
  • 1 clove garlic
  • 1 chili pepper
  • 1 teaspoon salt

Tools

  • Air Fryer

Steps

  • Wash and dry the eggplants, place them in the air fryer at 392°F for 8 minutes, then open, flip them, and cook for another 8 minutes.

  • When cooking is complete, place them in a container with a lid and let them rest for an hour.

  • After the time has passed, peel them.

  • You can shred them with a knife and fork or simply mash them with the fork: they are so soft that you’ll do it in no time.

  • Season with salt, oregano, garlic, and plenty of oil.

  • Wash the capers from the salt and add them, along with the chili pepper, to the eggplants. This is how I season the eggplants with capers and oregano.
