But here’s the perfect dose and it really gives me a lot of satisfaction. Fried pumpkin flowers are a real dish that reminds us of summer, the outdoors, and good things. FOR THE BATTER

  • 0.5 oz fresh yeast
  • 1 cup water
  • 1.25 cups all-purpose flour
  • 1 tsp salt
  • 1.5 tsp sugar
  • 10 salted anchovies
  • 10.5 oz mozzarella
  • 21 pumpkin flowers
  • 1 cup peanut oil

Preparation of Fried Pumpkin Flowers in Batter

  • Start by dissolving the yeast and sugar in water. While whisking, add the flour and finally the salt.

  • Let the batter rest for about an hour. It will be ready when it doubles in volume.

  • Quickly wash the pumpkin flowers being careful not to break them. Check inside to make sure they are clean.

    Prepare the oil in a small pan and bring it to a temperature of 340°F.

    Place half an anchovy and a nice slice of mozzarella inside each flower. Close with a half twist of the flower and pass it in batter.

    Fry and let the excess oil dry on absorbent paper. Sprinkle with salt and there you have the fried pumpkin flowers in batter ready.
