Gluten-Free Tart, preparing a gluten-free tart is definitely not easy. It’s not easy to work with buckwheat flour, which, like all gluten-free flours, is difficult to make ‘bind’ with the rest of the ingredients. I try my best! I assure you it’s worth it. I used elderberry flower and fruit jam, which a Sicilian company produces masterfully; this is not about being Sicilian, if a product is good, why not acknowledge it? It’s also good with blueberry jam, plums… prepare it, really good, with a unique taste, not very sweet but no less good than tarts with all-purpose flour. Ingredients
- 3 cups gluten-free buckwheat flour
- 2/3 cup sugar
- 1 cup gluten-free coconut flour
- 2 eggs
- 1/2 cup vegetable oil
- 1 lemon zest
- 1 cup jam
- 1 packet vanillin

Preparation
Start by combining the buckwheat flour with the sugar, coconut flour, vanillin, and lemon zest. Mix the ingredients well and add one egg, the oil, and the other egg. Quickly combine all the ingredients.
Let it rest in the fridge for half an hour wrapped in plastic or parchment paper
Using parchment paper and a rolling pin, gently roll out the dough on a 9-inch pan
Spread the jam over the base of the tart. Bake for 35 minutes at 350°F
