Gratinated champignon mushrooms: a cultivated variety that is excellent, abundant and therefore inexpensive. Although we all know that the king of mushrooms is the porcini mushroom, with its unmistakable taste and smell, equally good are honey mushrooms, chanterelles, and Caesar’s mushrooms. All fungi, wild or cultivated, have in common, from a dietary point of view, being rich in minerals and water while being extremely low in calories. Unfortunately, mushrooms have a very short shelf life, so when purchasing, make sure not to buy them dehydrated or, conversely, waterlogged; they should not be dark or have a bad smell. A method to preserve them for several days is to freeze them, in the case of porcini, while it is not advisable for cultivated mushrooms due to their abundance on the market.

Steps for preparing gratinated champignon mushrooms
This is how I clean mushrooms: in a salad spinner full of water, I dip the mushrooms and quickly swirl them with my hands, change the water and repeat the washing for a few seconds. I dry them with the salad spinner that we all or almost all have at home to dry salad.
I cut the stem off the mushrooms and arrange them on a baking tray with parchment paper, including the stems, season with salt and extra virgin olive oil, breadcrumbs, and parsley.
Just a few ingredients and the result is perfect.
I cook at 392°F for 20 minutes in the preheated oven. Alternatively, you can cook the mushrooms in the microwave with the Crisp mode at maximum power for 15 minutes.
