Ingredients for Making Hemp Seed and Blueberry Cookies

  • 1.76 oz hemp seeds
  • 1.76 oz dried cranberries
  • 1.5 cups rice flour
  • 4 tbsps vegetable oil
  • 2 tbsps water
  • 1/3 cup sugar
  • 2 tsps gluten-free baking powder
  • 1 orange (juice and grated zest)

Steps

  • Extract the juice from the orange and grate the zest over the sugar to preserve the essential oils. The orange must be organic if grated.

  • Prepare a large bowl to gather all the ingredients, first add the dry ingredients like the flour,

  • shelled hemp seeds,

  • the sugar with the grated orange zest,

  • mix using the whisk.

  • Make a small well in the mixed powders and add the oil,

  • the orange juice

  • and continue to mix all the ingredients.

  • Add the dried cranberries to the hemp seed cookie dough. If needed, add more water, a cup.

  • Transfer the mixture to the pastry board and

  • using the rolling pin, roll out the dough for convenience on the parchment paper.

  • Use a small glass to cut out cookies and place them on the baking sheet lined with parchment paper.

  • Bake in a preheated oven at 340°F for 20 minutes.
