Seeds, in general, are precious allies for health due to their nutritional properties. But above all, for those who are looking for taste and wellness that always help. Hemp seeds, in particular, have a high content of zinc and phosphorus that aids normal energy metabolism.
These cookies are suitable for everyone, for those following a vegan, vegetarian, gluten-free diet, and for those who are lactose intolerant.

Ingredients for making hemp seed and cranberry cookies
- 1/3 cup hemp seeds
- 1/3 cup dried cranberries
- 1 2/3 cups rice flour
- 1/4 cup seed oil
- 2 tbsps water
- 1/3 cup sugar
- 1 tsp gluten-free baking powder
- 1 orange (juice and grated zest)

Steps
I extract the orange juice and grate the zest over the sugar to retain the essential oils. The orange absolutely must be organic if grated.
I prepare a nice large bowl to collect all the ingredients, first adding the dry ingredients like the flour,
the hulled hemp seeds,
the sugar with the grated orange zest,
I mix with the help of the whisk.
I make a small well in the mixed powders and add the oil,
the orange juice
and continue to mix all the ingredients.
I add the dried cranberries to the cookie and hemp seed dough. If necessary, add water if the dough seems too dense, I added a small cup.
I transfer the mixture to the pastry board and
use the rolling pin to flatten the dough.
With a small glass, I shape the cookies and place them on a baking sheet with parchment paper.
I bake in a preheated oven at 338°F for 20 minutes.

Once they cool down, sprinkle them with powdered sugar ready to be enjoyed.
