Ingredients for making hemp seed and cranberry cookies

  • 1/3 cup hemp seeds
  • 1/3 cup dried cranberries
  • 1 2/3 cups rice flour
  • 1/4 cup seed oil
  • 2 tbsps water
  • 1/3 cup sugar
  • 1 tsp gluten-free baking powder
  • 1 orange (juice and grated zest)

Steps

  • I extract the orange juice and grate the zest over the sugar to retain the essential oils. The orange absolutely must be organic if grated.

  • I prepare a nice large bowl to collect all the ingredients, first adding the dry ingredients like the flour,

  • the hulled hemp seeds,

  • the sugar with the grated orange zest,

  • I mix with the help of the whisk.

  • I make a small well in the mixed powders and add the oil,

  • the orange juice

  • and continue to mix all the ingredients.

  • I add the dried cranberries to the cookie and hemp seed dough. If necessary, add water if the dough seems too dense, I added a small cup.

  • I transfer the mixture to the pastry board and

  • use the rolling pin to flatten the dough.

  • With a small glass, I shape the cookies and place them on a baking sheet with parchment paper.

  • I bake in a preheated oven at 338°F for 20 minutes.

  • And here are the hemp seed and cranberry cookies ready.

  • Once they cool down, sprinkle them with powdered sugar ready to be enjoyed.
