Homemade vegan spinach patties with chickpea flour and Swiss chard, which are regularly made with spinach, but sometimes they aren’t available when needed. I particularly love Swiss chard, and this is a way to use it. You don’t necessarily have to be vegan or vegetarian to make these fantastic patties; they can be a protein-rich meal for everyone, even those looking to vary their cuisine. Remember, this dish is also gluten-free as well as vegan and vegetarian.

Ingredients to Prepare the Vegan Spinach Patties
- 7 oz chickpea flour
- 0.25 cups cornstarch
- 1.5 oz breadcrumbs
- 1 cup Swiss chard, cooked, boiled
- 160 ml water
- as needed breadcrumbs (for breading)
- 1 pinch salt
- 1 pinch baking soda
- 2 tbsp extra virgin olive oil

Steps to Prepare the Vegan Spinach Patties
Prepare a mixture with chickpea flour, breadcrumbs, cornstarch, salt, a pinch of baking soda, and mix well. Add water, and if you like, also paprika or black pepper. I made these for the kids, so I didn’t add black pepper or paprika. Add the cooked and chopped Swiss chard. Prepare 4 balls, flatten them, and coat them in breadcrumbs or panko. I love cooking and thus also changing ingredients, adding some but also removing others. For cooking, if you have an air fryer, that works too, for 15 minutes at maximum power, or fry them in a pan with peanut oil.
Pour the chickpea flour into the bowl with
the cornstarch,
the salt and the baking soda,
add the breadcrumbs and dry mix the ingredients.
Also add the boiled and drained Swiss chard and
immediately add the water to mix everything.
Let it rest for a few minutes.
On a small plate, place the breadcrumbs and put a quarter of the mixture on top, shape it into a spinach patty, and coat it in breadcrumbs on both sides.
On the tray lined with parchment paper, cook the vegan spinach patties with a drizzle of oil in the microwave on crispy mode for 15 minutes at maximum power. (If you want, you can fry them or bake them at 375°F for 20 minutes)
And here they are, ready, the homemade vegan spinach patties, beautiful and crispy.
For an adult taste, in a pan with a drizzle of oil, I fried some crunchy peppers to accompany the spinach patties,
or you can simply serve them with a squeeze of lemon.
Variations
If you don’t want to use chickpea flour to make the spinach patties, you can use 2 boiled potatoes weighing 350 grams, obviously, besides the 200 g of chickpea flour, you should also remove 160 g of water. If you’d like, here is the recipe for completely vegan carasau bread lasagna.
