Necessary ingredients to prepare flavored breadcrumbs
- 1 cup breadcrumbs
- 1 clove garlic
- 2 tbsp extra virgin olive oil
- 1 tbsp chopped parsley
- 1 tsp fine salt
- Half lemon (zest)

- 4 fillets anchovies in oil

When I know I need to use it all, I prepare it with fresh bread crumbs; otherwise, to store it for several days in the fridge, I simply use dry breadcrumbs to avoid preservation problems.
In the chopper glass, or blender if you prefer, put all the ingredients including the olive oil.
Pulse the chopper intermittently for a few seconds until you see all the ingredients minced and evenly chopped
Pour the flavored breadcrumbs onto a plate to use what you need while storing the rest in a glass jar in the fridge, with the production date noted. You can safely keep it for up to 10 days in the fridge.

I generally add paprika to the flavored breadcrumbs for the color as well as the taste, I really like the intense yellow almost red color of the gratin when cooked. But if you prefer not to use it, you can add chopped chili instead.
