  • 1 oz mayonnaise (homemade fake)
  • 2 eggs (poached)
  • 1 avocado
  • 1 tsp black sesame seeds
  • 2 tbsps white wine vinegar

Steps

  • I’m fortunate to make bread at home, and I can tell you that I often experiment with alternative flours to wheat. Today, it was rye flour’s turn; I’ll keep making it because it stays soft for many days and has all the other positive sides.

  • On four slices of rye bread, you can also try other whole-grain bread if you prefer, spread a generous amount of homemade fake mayonnaise with Greek yogurt, a teaspoon of paprika, extra virgin olive oil, and salt. Mix for a few seconds with the hand whisk, and the fake mayonnaise is ready.

  • Prepare poached eggs, also known as in a shirt, this way: put a saucepan with two liters of water on the stove, add 2 tablespoons of vinegar and lightly salt it. As soon as the water boils, drop the cracked egg into it and lower the heat, cook for 3 minutes. Use a slotted spoon to remove the egg from the water and set it on a plate for a few seconds to let it cool slightly. Place it on the bread slice with the fake mayonnaise.

  • Cut the avocado in half lengthwise, remove the pit and skin, slice thin pieces, and place them on top of the eggs.
