Mango Ice Cream

Fresh and super fresh mango ice cream is ideal for the summer. There’s nothing better to start the day with fresh fruit. In the summer season, it could even replace an entire beach lunch and be enough. You can simply flavor the fruit with liqueurs, spices, or even just sugar, prepare refreshing smoothies, but one of the typical summer preparations is undoubtedly ice creams and granitas that best enhance the fruit. Today I preferred an exotic fruit with a strong and pleasant flavor: the mango, rich in vitamins, particularly B-group, ascorbic acid, vitamin C, beta-carotene, vitamin A, and polyphenols. It contains calcium, iron, phosphorus. The plant is native to Asia, but today it is cultivated in all countries with a tropical climate. Sicily has been producing mangoes for a few years now, offering its juicy, sweet, and delicious fruits.

  • 2/3 cup coconut milk
  • 3/4 cup powdered sugar

Steps to Prepare Mango Ice Cream

  • Peel the mango, remove the pit, and slice it lengthwise. Place the pulp in the food processor along with the sugar and blend until creamy, then incorporate the coconut milk and cream. To make the ice cream, I use a self-refrigerating ice cream maker that I’ve had for years, allowing me to make ice cream at any time and in any season. Place everything in the ice cream maker and set the time according to your device’s instructions. My mango ice cream is ready in thirty minutes, and I can store it in the freezer for up to 3 months, or consume it immediately, garnished with mango slices if desired.
