Mixed soffritto, the kind prepared with carrots, onions, and celery that we usually make and don’t always use all at once. My habit in the kitchen is to always prepare a little more and set it aside, storing it in the freezer as in this case. I intentionally prepare more mixed soffritto than needed to store it in the freezer and use it when I don’t have all the ingredients at home, have you ever noticed this? Usually, and it doesn’t happen only to me, if you have celery at home you’re missing carrots or vice versa, a classic!

Steps for preparing mixed soffritto
Wash the celery, onion, and carrot under running water, dry them well, and use the peeler to peel the carrot, peel the onion. Cut everything into pieces and place them in the cord chopper which chops more delicately, dice the vegetables.
I use a plastic container with a lid to freeze the mixed soffritto, after the first half hour of freezing I take it out and shake it for a few seconds and then put it back in the freezer, this operation certainly helps keep the soffritto separated and it is easier to use what is needed at the time of consumption.
