Ingredients

  • 10.5 oz zucchini
  • cup extra virgin olive oil
  • 2 tbsp lemon juice
  • cup apple cider vinegar
  • 1 clove garlic
  • tsp salt
  • 1 sprig mint (fresh)
  • 0.2 oz fresh chili pepper
  • 1 tsp dried oregano

Steps

  • After washing the zucchini, leave the skin on and slice them thinly with the mandoline.

  • In a large bowl, start seasoning them with salt, oregano, and lemon.

  • Chopped garlic and apple cider vinegar.

  • Fresh mint, parsley, and fresh hot chili pepper to taste.

  • Finish with extra virgin olive oil and freshly ground black pepper.

  • Mix all the ingredients well and let the seasoned zucchini rest for a couple of hours before serving.

  • Generally, to serve quick marinated zucchini, I arrange them in glass jars and add a label with the ingredients, a small gesture for my guests.
