Ingredients to prepare the onion jam

  • 1.1 lbs red Tropea onions
  • 1.25 cups sugar
  • 0.42 cup balsamic vinegar
  • 4 tbsps wildflower honey

Tools to prepare the jam

  • Kitchen scale
  • High-sided saucepan
  • 1 Mandoline slicer
  • Food mill
  • Immersion blender

Preparing the onion jam

  • Using the mandoline slicer, slice the onions directly into the high-sided saucepan.

  • Add the balsamic vinegar and let it simmer on low heat for 10 minutes.

  • As soon as the onions are soft, add the honey.

  • Add the sugar and let it cook for 45 minutes on low heat. After this time, your jam is ready to be jarred.

  • Personally, I prefer my Tropea onion jam smooth, so besides using the food mill, I also use the immersion blender.

  • ready!

  • For extra safety, I boil the jars with the onion jam in a pot with cold water for 30 minutes upside down, and after that time, I let them cool in the pot.
