  • 0.7 oz extra virgin olive oil
  • 1 tsp salt
  • 2 tbsp balsamic vinegar
  • 3 sprigs chives

Steps to Prepare the Orange and Cauliflower Salad

  • For this dish, no cooking is required but everything is cold and seasonal. Peel the oranges raw, divide the slices and then cut each slice into four parts and remove the seeds. After washing the heart of the celery, cut it into small slices. Similarly, after washing and drying the cauliflower, cut it into small pieces. In a small bowl, emulsify the extra virgin olive oil with the balsamic vinegar, salt, and finely chopped chives; I use scissors for convenience, mix for a few minutes. Now that everything is ready, assemble the ingredients with the seasoning. Place the oranges, the cauliflower with the celery alternating them, in a large bowl, season them with the tasty emulsion. Toss and divide into serving dishes.
