Orange Corn Flakes Cake

Orange Corn Flakes cake, a good and simple cake without flour, therefore gluten-free, naturally you already know that corn is gluten-free. Corn flakes or corn flakes were invented by the Kellogg brothers, (hence the name) who were doctors and needed to recycle stale grain; so they created this product to serve to their clinic patients. Obviously, shortly after, these products evolved and today we all know the wide range of corn flakes. I always choose orange marmalades for my cakes and fresh oranges, I think it is due to my “Sicilianity” Forgive me. This cake corn flakes resembles my ricotta cake with orange marmalade very much, I really like it in this version, but it can be made with any marmalade you prefer. Ingredients to prepare Corn Flakes Cake

  • 8 3/4 cups corn flakes
  • 1/2 cup butter
  • 1/3 cup brown sugar
  • 1 egg
  • 1/2 cup almond flour
  • 1 orange zest
  • 1 cup cow ricotta
  • 1 cup orange marmalade

Tools

  • Electric whisk
  • Pan 9.5-inch springform
  • Parchment paper
  • Bowl
  • Chopper

Preparation of the Orange Corn Flakes Cake

  • Using the chopper, I ground the corn flakes into powder

  • I melted the butter in a double boiler and poured it over the previously ground corn flakes and mixed them well together.

  • I covered a springform pan with parchment paper and placed the butter and ground corn flakes mixture

  • With the back of a spoon, I leveled the base of my butter and corn flakes cake, and while I prepare the cream, I let it rest in the fridge to cool.

  • With the electric whisk, I prepare the cream with sugar and egg, grated orange peel, almond flour, and ricotta.

  • I pour the cream over the base of corn flakes and butter

  • I put it in the oven at 356°F for 20 minutes.

  • Let the corn flakes cake cool slightly and sprinkle with orange marmalade

  • Here is my ready orange corn flakes cake

  • Great for breakfast or an afternoon snack
