Ingredients

  • 4.2 oz mixed pasta
  • 7 oz potatoes
  • 2.5 oz smoked provola
  • 1 carrot
  • 1 stalk celery
  • 1 onion
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 2 cups water
  • 0.7 oz tomato paste
  • 1 tsp salt
  • to taste black pepper
  • 1 chili pepper (to taste)
  • 10 leaves basil

Steps

  • Peel the potatoes and cut them into small pieces.

  • Similarly, chop the carrot, celery, and onion, sauté the garlic with the evo oil, and immediately add the onion, carrot, and celery mix.

  • Add the potatoes to the pan along with the vegetables and stir

  • along with the tomato paste.

  • Let it flavor for a few minutes and add 2 cups of water.

  • Cook for 10 minutes, adjust the salt, and add the pasta.

  • In the meantime, cut the provola, I preferred the smoked one, also into small pieces.

  • When the pasta is cooked, remove from heat and

  • add the smoked provola, stir, and let it rest for another 5 minutes, then serve the pasta with potatoes and smoked provola at the table.
