Pearl barley with tuna and avocado: a beautiful, indeed delicious, complete main dish. Since I discovered pearl barley, I basically only use that. I cook it faster because this refining process shortens the cooking times, it is bran-free and thus gives it a nice white color. Due to the beneficial properties it contains, this little cereal should always be encouraged for consumption for its many benefits, and, first of all, it helps the immune system to strengthen, helping the bones to fortify. It has an antioxidant action to combat skin aging. Except for those who cannot consume gluten products, everyone can consume it safely. Unfortunately, barley contains gluten and is not suitable for a celiac diet.

Ingredients Needed to Prepare the Pearl Barley

  • 1 cup pearl barley
  • 1 cup canned tuna in oil
  • 1 cup yellow cherry tomatoes
  • 1 cup red cherry tomatoes (red)
  • 1 cup arugula
  • 1 avocado
  • 1 tbsp salt

Steps to Prepare Pearl Barley with Tuna

  • Wash the pearl barley multiple times and set it to cook in cold water, and from the moment it starts boiling, count about 30 minutes. Meanwhile, wash the yellow and red cherry tomatoes and cut them into small pieces. Do the same with the arugula: wash it well and, after drying it, cut it into several parts. Cut the avocado in half and remove the seed inside, chop the flesh into small pieces and set it aside. Once the barley is ready, drain it and let it cool before assembling all the fresh ingredients. Do not drain the tuna from its preservation oil because it will be the only dressing for the pearl barley along with the avocado.

  • Mix all the ingredients with the cooled pearl barley and, if necessary, adjust the salt.

  • And here it is, ready to be enjoyed as a main course or a first course, pearl barley with tuna and avocado.

  • Can I substitute pearl barley with farro?

    Yes, of course, it is possible. Only the cooking time for farro will change, which will certainly be longer. Check the cooking minutes on the back of the package.
