Polenta with porcini mushrooms ready to be cooked with all the dried mushrooms incorporated. I immediately wanted to try a pack bought specifically in Valtellina, precisely in S. Caterina Valfurva, during one of my camper trips. Fantastic and very easy to prepare, practically like all other polentas, but with a small difference: inside the package there are also dried porcini mushrooms, which makes it an even more delicious and complete dish. The nice thing is that corn is a gluten-free cereal, and this makes us love it even more by everyone. So, if you want to prepare a lunch for everyone, for celiacs, lactose-free, and vegan, this is perfect.

Ingredients for preparing polenta with porcini mushrooms
- 17.6 oz polenta (with mushrooms)
- 4.23 cups water
- 1.41 tsp salt
- 1 chili pepper
- 1 pinch chopped parsley

Steps
In the pot, put the water and salt it. As soon as it comes to a boil, sprinkle in the polenta with porcini mushrooms, and with a wooden spoon, gently stir until all the cornmeal is absorbed by the water. Stir for at least 35-40 minutes.
Here it is ready, the polenta with porcini mushrooms! Add spicy chili pepper and a pinch of parsley to taste, and now it’s ready to be served.
