  • 4 oz Walnut kernels
  • 3 oz Parmesan cheese
  • 1/3 cup Extra virgin olive oil
  • 1 tsp Salt
  • 1 pinch Pepper

Preparation of the pesto

  • Here’s how simple and few ingredients without cooking transform into a delicious pesto.

  • Coarsely chop the walnuts in the chopper, there’s no need to grind them finely

  • Just a few turns to break them up

  • Remove the walnuts and without washing the chopper add the radicchio cut into pieces

  • Grind the radicchio very finely

  • Add the extra virgin oil with salt, parmesan with a pinch of pepper and blend for a few minutes until it becomes a creamy and homogeneous pesto.
