- 3 oz Parmesan cheese
- 1/3 cup Extra virgin olive oil
- 1 tsp Salt

Preparation of the pesto
Here’s how simple and few ingredients without cooking transform into a delicious pesto.
Coarsely chop the walnuts in the chopper, there’s no need to grind them finely
Just a few turns to break them up
Remove the walnuts and without washing the chopper add the radicchio cut into pieces
Grind the radicchio very finely
Add the extra virgin oil with salt, parmesan with a pinch of pepper and blend for a few minutes until it becomes a creamy and homogeneous pesto.
