Savory Christmas tarts with sautéed vegetables. A few years ago, I bought a kitchen tool that allowed me to prepare quite large tarts, which to me do not seem small enough to be called tartlets. Tescoma’s Delicia can be found in all home goods stores. Obviously, I can’t resist when I see an item that is new to me and could be useful in my kitchen. Yesterday, as I was tidying up cabinets and drawers (they go in sequence: once you organize one, the second follows), I found the perfect ingredients. My fridge almost never lacks a rolled puff pastry, cooked and raw vegetables, eggs, and cheese: they are practically essentials on the shopping list. With these ingredients, I prepared these charming savory Christmas tarts, also good for freezing.

- 1 puff pastry
- 7 oz Savoy cabbage
- 2.8 oz radicchio
- 2.8 oz fiordilatte cheese
- 1 egg
- 0.7 oz Parmesan cheese
- 2.7 tbsps extra virgin olive oil
- 2 tsp salt

Steps
Of course, even if I don’t write it, it goes without saying that I always clean and wash all the vegetables before using them.
After washing them, I sliced the radicchio and Savoy cabbage finely and cooked them for 15 minutes with two tablespoons of extra virgin olive oil.
First covered with a lid and then uncovered for the last 5 minutes. Of course, I added salt.
I let the cooked vegetables cool before using them.
I unroll the puff pastry and cut the tarts with the molds.
With one roll of pastry, I made 3 tarts and a fourth with the scraps.
In the deep plate, with the fork, I mixed the beaten egg with the grated Parmesan.
Along with the oven-cooked vegetables, I added the fiordilatte cheese cut into thin slices.
I added egg and Parmesan to the vegetables and
mixed everything evenly for the tart filling.
The molds not only cut the puff pastry, but they also seal. So, with the brush, I slightly dampened the edges of the tart bases.
I divided the vegetable filling with egg and Parmesan into 4 parts.
On top of each tart base, I placed a generous portion of filling in the center.
I covered the vegetables with another sheet of puff pastry, the decorated one.
This mold has 3 different designs: this is the one I chose.
Diamond-shaped.
I sealed and closed the tart mold, sealing all sides.
Here it is, ready to go into the oven: just the last step left.
With the same brush, I spread egg and milk together on the savory Christmas tarts.
I put them in the oven, preheated to 375°F, for 25 minutes.
And here they are ready: my savory Christmas tarts.
Great to serve with a cocktail or for a festive appetizer.
