Sicilian Salmoriglio Recipe

Traditional Sicilian salmoriglio recipe we use to season everything on the grill. I remember my dad using a generous sprig of dried oregano to spread this sauce on grilled foods. I remember, he called it sammurigghio, asking my mom if it was ready to season the artichokes or the fish or the meat. The main base after all, besides the oil and lemon, remains oregano which gives dishes a unique flavor and aroma.   • 1 lemon (juice)
  • 1 clove garlic
  • 1 sprig dried oregano
  • 1 hot pepper

Steps to Prepare Salmoriglio

  • Place all the dry ingredients in a bowl, the chopped hot pepper, salt, oregano, and parsley washed, dried, and finely chopped. For the garlic, I used a convenient garlic press, no need to peel it first.

  • Mix the ingredients vigorously.

  • Use the juicer to extract the juice from a lemon.

  • Now add the lemon juice

  • and the extra virgin olive oil.

  • Using the hand whisk, blend all the ingredients well together.

  • And here it is, the Sicilian salmoriglio recipe that my dad always prepared when he needed to season grilled fish.
