Simple Oven-Baked Savoy Cabbage

Simple oven-baked savoy cabbage, a real novelty for me, as I’ve always only prepared this vegetable stewed or sometimes raw in a salad with vinegar, oil, and mustard. I usually prepare gratin radicchio, and today I wanted to experiment with the savoy cabbage with breadcrumb flavored with sweet paprika. As a first rule, never throw away stale bread; we always find a use for it sooner or later, like today for this recipe. I usually put it in the blender glass with garlic, parsley, lemon peel, thyme, and mint, basically whatever my garden offers at that time, because aromatic plants are never missing in my garden, for decoration, but also and above all to flavor dishes.

Ingredients

  • 1.2 lbs savoy cabbage
  • 2 3/4 cups stale bread (gluten free)
  • 1 fl oz extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 2 tsp salt
  • 1 tsp paprika
  • 6 sprigs chives
  • 2 sprigs thyme
  • 1 sprig mint
  • 1 sprig rosemary

Steps

  • Use a chopper if you have stale bread and chop it together with rosemary, thyme, garlic, chives, and mint, paprika with salt and extra virgin olive oil with apple cider vinegar.

  • Alternatively, use breadcrumbs with all the herbs and seasonings.

  • Wash the savoy cabbage, remove the first two leaves (I usually use them for minestrone), and cut it into slices; you will get 6. Arrange them on the baking tray with parchment paper.

  • Season the savoy cabbage with flavored breadcrumbs.

  • Add a drizzle of oil and sprinkle wine between each slice.

  • Bake in the oven at 356°F for 20/25 minutes
