Simple and very easy to prepare squid salad. You can boil them first and season them later. They will certainly be tastier if left for a day or two with all the seasonings to marinate. Let’s talk about mollusks, of which squids are a part, but we must distinguish between two different families: those with a shell and those without. We all know the ones with shells, which are clams, oysters, mussels, fasolari, truffles, scallops, razor clams, and sea snails. Then there are the mollusks without shells, which include squids, as well as cuttlefish, octopuses, octopi, and squids.

Ingredients

  • 2 lbs squid
  • 1 clove garlic
  • 1 bunch parsley
  • 1 stalk celery
  • 1 Tropea red onion
  • 7.8 oz extra virgin olive oil
  • 2 carrots
  • 2 tbsp lemon juice
  • Half lemon
  • 1 pinch black pepper
  • 10 oz water

Tools

  • Pot
  • Bowl
  • Wooden Spoon
  • Cutting Board
  • Knife

Steps

Now I’ll tell you how I prepare the simple squid salad. After cleaning them, I wash the squid and, on the cutting board, cut them into small pieces.

  • Cut half a lemon into four parts and place it in the pot with the squid. Add the water, cover, and cook for 25 minutes.

  • Meanwhile, prepare the dressing with carrots, celery, parsley, onion, and a garlic clove without the core. Cut everything into small pieces, then season with extra virgin olive oil, salt, lemon juice, and freshly ground pepper.

  • Remove the squid from the cooking water and drain well.

  • Combine the prepared dressing with the squid, mix, and let them marinate for a few minutes before serving.

  • Here is my simple squid salad ready.

  • Great dish for Christmas Eve or, if you prefer, even for tomorrow itself.

Tips

I would also recommend the stewed squid, a truly special second course, a Mediterranean, vegan, and gluten-free dish.

My name is Pina, and my passion is food and cooking in general. On the blog, I focus on regional dishes like those from my birthplace, Sicily. I also feature dishes from Lazio, the region that has hosted me for over 40 years, but in general, I cover all Italian regions. Traveling and exploring is my second passion, so I couldn't leave out dishes from around the "World" on my blog. My blog is divided into simple and essential sections like appetizers, first courses, main courses, side dishes, bread and leavened products, jams and preserves, wines and wineries, and of course, travels. Desserts are included, and finally, there is a dedicated corner for gluten-free options. Easy recipes, explained step by step and always updated.
