Immediately scent the sugar with the pisto. I bought it and it is delicious and super fragrant, but you could make it yourself with cloves, cinnamon, and nutmeg. Pisto, in fact, takes its name from pistare or pestare, meaning crush, reduce to powder. Steam the pumpkin in the microwave on a plate covered with plastic wrap for 10 minutes at maximum power, let it cool. You can also bake the pumpkin in a fan oven for 20 minutes at 375°F.

Use 2 tablespoons to form balls of 1 to 1.5 oz each, place them on the baking sheet with parchment paper. Sprinkle them with powdered sugar.
