Spaghetti with Anchovies and Breadcrumbs

Spaghetti with anchovies and breadcrumbs, a simple and quick dish, delicious to my taste, from the Sicilian gastronomic tradition, my homeland! Salted anchovies are never missing in any fisherman’s family, where the wives skillfully and passionately prepare with love. Another ingredient for this dish is breadcrumbs, which is also a way to reuse the abundance of homemade bread, sometimes just because with a large family, cheese is scarce. Finally, capers, another ingredient for spaghetti with anchovies and breadcrumbs, generously provided by the land in southern Italy, with this dish giving an idea of what is poor but flavorful cuisine.

Ingredients

  • 1 cup breadcrumbs (fresh bread)
  • 2 tbsps Salted capers
  • to taste Chili pepper
  • 1 clove Garlic
  • to taste Extra virgin olive oil
  • to taste Salt
  • to taste Parsley
  • 6 Anchovies

Preparation

  • Put on the water for cooking the pasta, and in the meantime, in a small pan, brown the garlic clove with the chili pepper, the anchovies and the capers.

  • In a non-stick pan, toast the breadcrumbs; no need to add oil.

  • Once the pasta is cooked al dente, combine the ingredients and mix, leaving some toasted breadcrumbs to sprinkle along with chopped parsley over the dish.
