Ingredients

  • 12 king prawns
  • 5.5 oz spaghetti
  • 2 tbsp extra virgin olive oil
  • 1 tbsp chopped parsley
  • Half lemon (zested)
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 clove garlic
  • Half cup dry white wine

Steps

  • Remove the shells from the king prawns along with the heads and intestines, wash and dry them. Put the garlic in a pan with the oil and let it brown.

  • Add the cleaned prawns, leaving two whole (one for each plate as a final decoration), let them cook for a few seconds and pour in the white wine. Add the tomato paste with the parsley, salt, and grated lemon zest, let it cook for 5 minutes. Meanwhile, cook the spaghetti for a few minutes less than the recommended time, drain it while still al dente and toss it for two minutes in the pan with the prawns.

  • And here they are ready to be served with a handful of fresh chopped parsley and more lemon zest, the spaghetti with king prawns.
