Speck Dumplings

Classic Italian specialty speck dumplings, a typical Tyrolean dish born from creativity and the needs of the moment like all Ladin cuisine. The Romans, represented in this case by employees and soldiers, with their vulgar Latin spoken daily, combining with the Nordic languages of the Dolomites, thus creating Ladin. Ladin cuisine is mainly prepared with tasty but actually very simple dishes, using local zero-mile ingredients, absolutely seasonal, what the land provides in that season. Between Trentino, Veneto, and South Tyrol in these parts of the Dolomites, Ladin culture still prevails, and thus gastronomy such as some typical dishes, like apple strudel or barley soups, or pancakes with a ricotta and spinach filling, there are also speck dumplings with stale bread, which today I will improperly prepare with love as a Sicilian, like all my dishes without distinction.

Ingredients

  • 4.5 oz stale bread
  • 2.8 oz speck
  • 1 egg
  • 130 ml milk
  • 1 onion
  • 1 nut butter
  • 1 tablespoon chives
  • 1 tablespoon chopped parsley
  • 1 pinch salt
  • to taste pepper

Steps

  • Put the diced stale bread in the bowl, drizzle with milk, and add the chives.

  • Finely chop the parsley and add it along with the egg, salt, and pepper.

  • Meanwhile, in the small pan with the nut of butter, brown the onion with the speck, cut into small pieces.

  • Stir occasionally and toast the speck without burning over very low heat.

  • As soon as the speck has cooled down, add it to the rest of the ingredients in the bowl,

  • mix everything well and let it rest for a few seconds.

  • With wet hands, form round speck dumplings and boil them in salted water for 15 minutes, here they are ready.

  • Today I prepared a vegetable broth with a carrot, a celery stalk, and a small onion, boiled it for 40 minutes, and then filtered it. When serving, I cooked the dumplings in the filtered broth.
