Stew with peas freshly frozen in May, I shelled them and froze them in a bag already portioned. Meat today constitutes, along with other protein sources, a fundamental food for our diet. The veal belongs to the category of white meats like pork, rabbit, turkey, and chicken, but also lamb and all poultry. Veal to have tender and excellent meat should be fed only milk and not exceed 4 months of age. Many are the parts used for stew, one of these is the ‘cappello del prete’, shoulder muscles also suitable for broths and boiled as well as for preparing stew of course. Another part is the boned shoulder rump, or the ‘fusello’ always coming from the shoulder muscles. The neck is also a muscular part always suitable for stews.

- 1/4 cup flour
- 1/8 cup extra virgin olive oil
- 3/4 cup white wine
- 1 1/2 tsp salt
- 2 sprigs rosemary
- 1 pinch sweet paprika

Steps for preparing the stew with peas
For this recipe, I used fresh peas frozen by me just after harvesting.
Lightly flour the meat pieces.
Put the oil in the pan with a sprig of rosemary and brown on all sides
When the meat is well browned, pour in the white wine and adjust with salt, then add the sweet paprika.
Add the peas and cover.
Lower the flame and continue cooking for 40 minutes
Before serving the stew with peas, let it rest for a few minutes, sprinkle with fresh parsley and freshly ground black pepper if you like.
