Steps for Preparing the Chocolate Nest

  • Chop the almonds and walnuts into pieces.

  • Together with the pine nuts and pistachio crumble, roast the almonds and walnuts in the oven at 340°F for 10 minutes.

  • Chop the chocolate into pieces, put it in a container and place it in a double boiler over moderate heat, stir with a wooden spoon, and using the thermometer, melt at 113°F, then immediately transfer the container with the chocolate to cold water and lower the temperature to 77°F. Then transfer the container with chocolate back into the double boiler, and always stirring with the wooden spoon, raise the temperature to 90°F.

  • Remove the chocolate from the double boiler and incorporate the roasted nuts.

  • Mix the nuts and chocolate well.

  • Prepare a cake stand with parchment paper and place a 4-inch round cutter in the center, or alternatively, a glass will do.

  • Spoon the mixture around the round cutter to resemble a nest.

  • Let cool completely at room temperature before removing the round cutter.

  • Also remove the parchment paper under the now-cool chocolate nest and fill with chocolate eggs.
