Sweet Plum Cake

Cake sweet plum, I really like this cake in this version. It can naturally be made with any type of seasonal fruit. In winter it is my classic sweet apple cake, in summer it goes well with strawberries, peaches, apricots, berries… I am very proud to share this family recipe, it was born as a sweet apple cake, but on every important occasion I gladly prepare it, it was my mom who passed on the very simple and quick basic recipe that I often change according to the season. The sweet plum cake melts in your mouth for its softness, its delicate taste of amaretto essence is very pleasant, you can’t help but want to finish it. Ingredients

  • 3 eggs
  • 160 g sugar
  • 90 g butter
  • 1 glass skimmed milk
  • 1 packet baking powder
  • 300 g all-purpose flour
  • 500 g plums
  • 1 tbsp brown sugar
  • 1 vial almond essence

Preparation

  • Wash the plums and slice them, put them in a bowl with a tablespoon of brown sugar. In the stand mixer bowl, place the eggs and sugar, start it. Add the butter, milk, almond aroma and, while still mixing, the flour and baking powder.

  • Line a 8.66 in. cake pan with parchment paper, pour the batter, and arrange the plums in a circle on top, I used two different varieties because I liked both.

  • Use all the plums and sprinkle the brown sugar on top. Bake for 30 minutes at 356°F

  • It’s my habit to prepare at least four cupcake liners with the cake batter, let’s call it this: Quality Test. Naturally, the baking time here drops to fifteen minutes or a little more.

  • Ready!
